Shinka Ramen & Sake Bar occupies the lobby level of the Wyndham Garden Chinatown Hotel on the Bowery, a restaurant founded by veterans of New York's top Japanese ramen kitchens. In 2019, Shinka won the JapanFes Ramen Champion award, defeating eight other top Japanese ramen shops in head-to-head competition. The restaurant is best known for its signature beef bone marrow gyukotsu ramen, an innovation on the pork-dominant tonkotsu format, and its Birria Ramen, which layers Japanese and Mexican braised beef traditions. A curated sake bar makes Shinka as suitable for an after-work drink as for a full ramen dinner. The kitchen closes 30 minutes before posted closing time.
