About
Sip & Guzzle is a bi-level Japanese drinking destination tucked into a charming West Village townhouse. Upstairs, Guzzle serves approachable highballs, Japanese beers, and a concise bar menu in a lively setting. Downstairs, the intimate five-seat Sip—created in the tradition of Tokyo's SG Club—offers meticulously crafted, technique-driven cocktails using Japanese spirits and seasonal ingredients. Co-founded by Asian bar magnate Shingo Gokan and veteran bartender Steve Schneider, the concept earned the #39 spot on the World's 50 Best Bars 2025 list. Reservations for Sip are released on Resy 10 days in advance at midnight; after 22:30, both floors operate as walk-in only with a late-night menu.
Why it's on Washoku Guide
  • Experience two distinct bar worlds under one roof: a relaxed upstairs with highballs and Japanese beer, and a five-seat speakeasy downstairs with world-class technique-driven cocktails.
  • Ranked #39 on the World's 50 Best Bars 2025, placing it among the most acclaimed cocktail bars on the planet.
  • Shingo Gokan, the creative force behind Tokyo's SG Club, brings authentic Japanese bartending philosophy—omotenashi, balance, and precision—to New York.
  • The intimate basement Sip counter offers one of New York's most immersive and personalized cocktail experiences, limited to just five seats.

Sip (basement) opens at 17:00–18:00; walk-ins only after 22:30 on late-night menu. Reservations via Resy, released 10 days in advance.
