Yoshoku opened in July 2025 as the flagship Japanese dining destination within the newly renovated Waldorf Astoria New York, marking a storied return for one of Manhattan's most iconic hotels. Executive chef Ry Nitzkowski, who has honed his craft at notable establishments including Shuko and Mr Moto, leads a menu that bridges traditional Japanese kaiseki philosophy with the grandeur of the Waldorf setting. Diners may choose from à la carte options including maki, nigiri, sashimi, and small plates like snap pea and watercress salad, or opt for the $188 kaiseki-inspired tasting menu with an optional $94 beverage pairing. A Japanese afternoon tea program (from $135) runs Wednesday through Sunday. The restaurant is located near the hotel's Park Avenue entrance.
