Bistro Sakana occupies a special place in Vancouver's Japanese dining history as a pioneering all-female sushi bar founded in 2005 by Japanese chef Etsuko Needham and her co-owner husband Peter Needham, with sake expert Iori Kataoka as a founding partner. Chef Etsuko's Japanese culinary training informs every plate, from the delicate aburi oshi sushi — pressed and flame-torched in the tradition of Japanese oshizushi — to the innovative Japanese fusion small plates that blend West Coast ingredients with Japanese technique. Co-owner Iori Kataoka, a BC Restaurant Hall of Fame inductee and certified sake sommelier, curates a sake program that is among the most thoughtfully assembled in the city. Nearly two decades after opening, Bistro Sakana remains one of Yaletown's most beloved and authentic Japanese dining destinations.
