Sushi Hyun represents one of Vancouver's most remarkable culinary achievements: a Michelin-starred omakase experience delivered by chef Juhyun Lee, who, despite being Korean-born, underwent entirely Japanese sushi training and has mastered Edomae tradition to an extraordinary degree. The Michelin Guide's own inspectors noted that 'Japanese luxury pervades every element' of the experience. The centrepiece is a stunning counter hewn from a 200-year-old hinoki cypress tree, around which Lee crafts each piece of nigiri with quiet precision. In 2025, Lee received both a Michelin star and the coveted Young Chef Award for Vancouver. The restaurant operates in the West End at 795 Jervis, with two seatings nightly from Tuesday to Saturday.
