About
Owner Tatsuya Kuramori was born and raised in Okinawa, Japan, arriving in Vancouver in 2006 as a Japanese language teacher. After years of missing the rich pork-bone broth and thick wheat noodles of his home prefecture, he launched Tatchan Noodle as a yatai food cart in 2022 before opening a permanent Strathcona storefront in September 2025. Okinawa soba is fundamentally different from mainland Japanese ramen — the broth is a clear, delicate pork and bonito stock rather than the heavy tonkotsu or chicken broths familiar to Vancouver diners, and the thick, flat noodles have their own distinctive texture. Tatchan's arrival fills a conspicuous gap in Vancouver's Japanese food landscape, offering something genuinely unavailable anywhere else in the city. Vancouver Magazine and Noms Magazine covered the opening in October 2025 as a significant addition to the city's Japanese dining scene.
