Uroko (鱗, 'scales' in Japanese) is the most craft-focused chapter of the Asazu family's Austin story. Co-founded with chef Masazumi Saio, whose 16 years at Uchi honed a technique that bridges Japanese tradition and Austin's ingredient culture, the restaurant operates as a temaki bar by day and an omakase destination on Thursday through Saturday evenings. The 12-course omakase, priced at $84 per person, showcases Saio and Také's combined mastery with fish sourced globally. Weekly sushi classes bring Japanese culinary education to the public, extending Uroko's mission beyond the plate. The Tock reservation system manages demand; deposits are required for omakase seatings.
