Uchiwa takes its name from the traditional Japanese round fan, signifying the restaurant's aspiration to the refined, structured elegance of kaiseki dining. As the third restaurant in White Rabbit Family's WA Garden project, Uchiwa delivers a ten-course kaiseki progression that anchors around the finest seasonal ingredients available in Russia: tender wagyu beef, fragrant sea urchin, premium tuna toro, and the rare spicy eel anago. Brand chef Vladimir Mukhin and head chef Konstantin Shkarban have structured the menu around the kaiseki principle of seasonal balance and visual beauty. The Samurai Crab set showcases the restaurant's ability to build an entire kaiseki around a single star ingredient. The setting within the Romanov Dvor business centre shares the intimate, courtyard atmosphere of WA Garden.
