Founded in 2010 in Nagoya's Showa ward by Kenichi Kaji, Kajiken has grown into a global abura soba specialist with locations across Japan, Asia, and the United States — all Michelin-recognised at its San Mateo outpost. The Toronto location at 4850 Yonge Street, which soft-opened on 4 October 2025 and held its grand opening in November 2025, is the chain's first foray into Canada. Japanese-born chef Ueda oversees the kitchen, preparing homemade noodles and the proprietary secret sauce that underpins every bowl. Customisable toppings — minced pork, pork belly, roast beef — allow diners to build their ideal bowl of this distinctly Tokyo-influenced soupless style.
