About
Touhenboku – Japanese for 'blockhead' – takes its name from a beloved cafe in Ueno, Tokyo that owner Zuimei Okuyama frequented in his youth. Okuyama trained at the Shokuno Dojo ramen school in Chiba, Japan, under master Ishigami-san before bringing his craft to Toronto, opening the original Queen West location in 2013. The Yonge & Eglinton location extends the same mission: serving honest, traditional ramen using fresh noodles made in-house daily on a $40,000 noodle machine. Unlike most ramen shops, Touhenboku uses a chicken-based broth, giving its bowls a lighter yet deeply flavourful character. Gyoza, sake, and Japanese beer round out the menu.
