About
Mazesoba—literally 'mixed noodles'—is a Tokyo innovation that replaces the ramen soup with a concentrated sauce: typically pork fat, soy tare, oyster oil, and a raw egg yolk that the diner mixes tableside. Japanese chef Takuma Ishikawa refined this style into a global concept with Kokoro Tokyo Mazesoba, which has grown into the world's largest mazesoba chain since its 2013 Tokyo founding. At 551 Seymour Street, the house-made multi-grain noodles provide an earthy, slightly nutty base for Kokoro's signature niku (meat) and zenbu (everything) mazesoba. After the bowl is finished, guests traditionally add a small portion of rice to the remaining sauce—a practise called 'noodle replacement' that is encouraged by staff.
