Tetsuya Kudo brought his Marutama Ra-men concept (rebranded Maruhachi in Canada) from Kawaguchi, Japan to Vancouver in the mid-2000s, introducing North Americans to the silky, rich tori-paitan broth style—a white, opaque chicken-based ramen that became the chain's hallmark. House-made noodles and fresh toppings including marinated tamago eggs and yaki chashu (seared pork) elevated the quality bar for Vancouver ramen. With seven locations across Metro Vancouver, the chain has remained Japanese-owned and operated, maintaining the original Kawaguchi recipes and quality standards that made it famous.
