About
Uki Uki is the gold standard for authentic Japanese noodles in Warsaw. Owner Taira Matsuki, originally from Tokyo, created the restaurant to bring genuinely Japanese udon and ramen to a city hungry for the real thing. Kitchen manager Kohei Yagi, who holds a PhD in food science from Kyushu Tokai University, oversees production using the traditional Sanuki method from Japan's Kagawa Prefecture – creating the thick, chewy udon noodles the restaurant is renowned for. The ramen machine has been approved by the Ramen Association of Japan. Multiple reviewers confirm Japanese ownership, and the restaurant is a recognised gathering point for Warsaw's Japanese expat community. Uki Green (vegan ramen) and a second Zgoda location have since expanded the brand.
