Gen Mizoguchi's lineage is impeccable: his father operated a respected Tokyo sushi restaurant for 35 years, and Mizoguchi grew up immersed in the tradition before opening Yui in 2015. Fish is flown in from Japan, aged and prepared using the centuries-old Edomae methodology of the Tokyo bay tradition — rice seasoned with red vinegar, proteins cured or marinated rather than simply sliced.
